ETHIOPIAN (AFRICAN) RECIPES FROM AFRICANS AT HOME AND ABROAD
VEGETABLE DISHES
CURRIED VEGETABLES 5 Vegetables Kale or Collard Greens Black Beans 2-3 Spring Onion 4-5 clove garlic 1 tablespoon cumin or geera 1 tablespoon berbere (optional) 1 tablespoon coriander 1/2 tablespoon chili powder (less if hot chili powder) 1 tablespoon Curry 2 tablespoons I-live oil or water 1/4 water Sea Salt (optional Lemon is a good substitute) Saute onions in oil or water at medium high heat making sure to brown the onions. Add Garlic and cumin at this time. Chop up whatever vegetables there are (Carrots, Brocolli, Bell pepper, Celery, Plum Tomatoes, etc.) well. Add vegetables to oil or water; add other spices at this time. Chop the Kale into small pieces and add right on top of the other vegetables and cover pan with lid or plate. After kale looks like it is just starting to soften stir all vegetables spices together and add the black beans cook let cook for another 15 mins on medium heat. Add your 1/4 cup water when the oil or water used in the beginning is no longer in the pan. Cover with lid and continue to let cook. The Longer this cooks on low to medium heat the better the flavors. Just keep checking how the kale is and this is a good guage for when its done. The optional ingredients are not required for this to taste good but are good additions to add variation.

Lentil Soup 2 tablespoons oil or water 2 spring onion chopped plum tomatoes (optional) 3 to 4 clove garlic 2 cups lentil 1 1/4 tablespoon ginger 1 1/4 tablespoon cumin 1 1/4coriander 7 cups Water 2 slices of lemon (1/4 thick) pepper to taste Sea Salt (optional Lemon is a good substitute)
Heat oil in heavy pot on medium high heat. Saute onion and garlic until browned. Stir in lentils, ginger, cumin and coriander and coat wtih onion/garlic mixture. Add lemon slices, 7 cup garlic water, tomatoes, cayenne, pepper (One is free to add the pepper now for more kick or later on for more mild soup). Take the pot off the burner, discard lemon slices. Season if you have not already added pepper this is a good time..
Good to serve like this with rice. or Puree soup in blender or food processor. Adding as pleased some extra water, garlic, and cumin to make it soup consistent. Also try adding fresh coconut milk to this about a 3-5 tablespoon The best thing about this recipe is that it only takes about 20 mins. This is perfect for when time is swiftly passing.
